The Kirei 80 is a relatively dry sake made from rice that has been polished to just 20%. The rice variety is Shin-Senbon, an unusual native rice from Hiroshima. The result is a sake with a rich rice flavor, which intensifies as the sake ages. The Kirei 80 features mineral and spicy notes, with hints of licorice, pear, and brown sugar. It is unpasteurized and undiluted. The sakes from this brewery are known for their good balance between umami and acidity. The Kirei 80 is an excellent accompaniment to a wide range of dishes.
